| This cheese is made on the Sharpham Estate near Totnes, Devon, overlooking the River Dart - good English wines are also made on the same estate. The cheese derives its distinctive shape from the moulds in which it is made - they are shaped like baskets or colanders. Such moulds are commonly used in areas such as Corsica and Sardinia to make ewes' milk cheese, although Sharpham Rustic is a cows' milk cheese with a delightful richness from the Jersey milk which is used. |
