Emmental (Swiss)

Emmental accounts for one third of Swiss cheese production and the name comes from the Emme Valley near Bern where it originated. A thousand litres of milk are needed to make one cheese weighing 80 kilos (176 pounds). The Swiss say that anyone can make the holes, but only they can make the cheese!
