This is a good eating cheese apart from its uses in cooking. Parmesan cubes are delicious as a pre-meal appetiser with a glass of red wine. The production of this cheese is strictly controlled and it can only be made between 1 April and 11 November with milk from certain Italian provinces. An entire cheese weighs about 30 kilos (66 pounds).
