An unusual-looking cheese made during the winter in the Jura. The pale yellow smooth paste is divided horizontally by a band of blue-black soot or ash. Traditionally the cheese was made from morning and evening milk coagulated separately. The soot protected the morning curds until the evening curds were placed on top.
