Vacherin du Mont d'Or Cheese 500g approx. We sell hundreds of these every Autumn at a really keen price. This cheese is seasonal and is only made from September to February. The spruce bark which surrounds the cheese can often look mouldy and dark-coloured, even black. This is the nature of this cheese as the mould helps develop the unique flavour. As the cheese ripens. the crust develops a crumpled look, and grows a suface layer of mould. Again this is normal. The top rind, together with its layer of surface mould, should be removed before consumption of the cheese to reveal a beautiful soft yellow paste below. This cheese may not be suitable for those who prefer a cheese with little or no mould.

Made with unpasteurised milk



Vacherin is produced in the autumn when the cows are not giving as much milk as is needed for the larger mountain cheeses. The Vacherin that we stock here is made in a round weighing approximately 500g. This is brine washed cheese that has a thick orangey-brown velvety crust. It is wrapped on the outer edge in spruce bark. The bark imparts a wonderful flavour to the cheese. The taste is a never to be forgotten flavour. The cheese becomes almost liquid as it matures. It is an excellent pairing with Champagne.
